So, I decided I would try to make meringues out of the Peppermint Oreos that magically appeared in my grocery chart. They aren't fancy & they really were easy to make (seriously, very few ingredients) and most importantly they were delish.
Peppermint Oreo Meringues
3 large egg whites
1/4 tsp cream of tarter
1/2 cup sugar
1 tsp pure vanilla extract
20-24 (approx) Peppermint Oreo cookies
1. Heat oven to 250* - Line a large baking sheet with parchment paper
2. Using an electric mixer beat the egg whites & cream of tarter until frothy.
Gradually add sugar & vanilla & continue to blend/beat until incorporated into the mixture.
(2-3 minutes)
3. Spoon 10-12 level spoonfuls of the meringue onto the prepared baking sheet & parchment paper. Place 1 Oreo on the center of each meringue & press down slightly. Repeat. Basically so you will have 2 layers of Oreo cookies. Then dollop another Tbsp over the stacked Oreo cookies spreading it over both cookies to cover & seal it.
4. Bake until the meringues are firm & dry. 60 to 70 minutes. Let cool 15 minutes before serving.
They're so good, they'll make you do a dance & beg for mercy.

That is such a clever idea! I fell exactly the same about peppermint, but especially peppermint ice cream.
Love this idea. I want to make them for a Christmas party I'm having. Will they keep for a couple of days or do they need to be served right away?
