Kid Friendly:: Homemade Granola

A few have asked for the recipe of the homemade granola we had at the birthday brunch. It was delish, and there wasn’t any sugar added. All ingredients were sugar free. So here goes…

2 cups old fashioned oats
1 teaspoon of good vanilla
1 teaspoon of cinnamon
a pinch of salt
zest of an orange
1/4 brown sugar *splenda*
1/2 cup of sugar free maple syrup (or honey, but I used the sugar free syrup)
3/4 cup of dried cranberries
3/4 cup of shredded coconut
2 Tablespoons of peanut butter (I used Trader Joe’s white chocolate peanut butter)

can also add: peanuts, raisins, almonds, cashews, dried fruit, white or milk chocolate chips, or rice krispies. I tried to keep it mainly nut free (minus the peanut butter) for allergy reasons. Having a group of kids over…you never know what one may be allergic to. But any add ins would make this recipe even more scrumptious.

Mix all ingredients, but dried fruit & chocolate chips (if you choose to add) in large bowl.

Preheat oven 350*
Bake 30-35 minutes. Stirring every 7 minutes or so.
Place & spread in greased cookie sheet.
After baking, add dried fruit & chocolate chips. Store in air tight container.

***Did you know, granola if stored in an air tight container can keeps for weeks in the fridge??? This is a great, quick, go-to, staple in our fridge. So easy to make. Enjoy!***
