what to do with the leftover pumpkin???

After making my pumpkin chocolate chip muffins, or really anything that calls for pumpkin, you always seem to have a little pumpkin left over.  Are you with me on this?  I hate wasting good pumpkin, soooo….last year I came up with this easy add-on recipe to combine with any regular pancake recipe you have.

Trust me, it is delish!

Pumpkin Pancakes

Follow the recipe for pancakes from any baking mix. (We use Pioneer)
then add:
1/2 cup or your remaining amount of plain pumpkin (Libbys or whatever you use)
1/2 tablespoon of good vanilla
1/2 tablespoon of pumpkin pie spice
a dash or two of cinnamon
mix all together. Scoop batter into greased skillet or griddle & cook as you usually would pancakes.

My other two suggestions would be to make them in a cast iron skillet. They are so much better cooked in a skillet.  That is, unless you are cooking for a small army, then I completely understand cooking them on a griddle.  Because that will be me soon when my kids will require 50 at a time.
And if you can get your hands on some wonderful pear preserves, omgoodness…the combination of the pumpkin with the pears is nothing short of a small taste of heaven!  No syrup required when you use with the pear preserves. mmm.mmm.mmm.

    We make pumpkin waffles, but I guess you knew that, hehe. I make a huge batch about once a month for dinner and freeze the left overs to make our own ego’s. Have a great week, about to be checked out for the week.

    these look spectacular…i happen to have some leftover pumpking pie filling in my fridge from a baking project i have yet to post. what a great way to start saturday morning. and i do have pear preserves…from my tree..so thank you for that idea too! popping in from TT and jello!
