Hearty Bacon Minestrone

There’s nothing like eating comfort food when the weather is cold or when you’re sick.  One of my many favorite go-to comfort foods is soup.  I love a steamy hot bowl of {any} soup.  It’s love in a bowl!

Tidy Mom, who I adore & was lucky enough to meet 3 weeks ago, has decided to host a soup party.  That’s all I needed to hear to join in on the recipe link party.  Because the more {LOVE} in a bowl recipes I can find, the better!

Tidy Mom
So here we go~
Hearty Bacon Minestrone
3 garlic cloves, minced
1 tablespoon olive oil
2 cans of Bush Beans Cannellini Beans (I drained mine)
1 32oz of chicken broth
1 can of Hunts diced oregano, garlic & basil tomatoes
8 oz of uncooked macaroni pasta
3-4 slices of cooked bacon chopped
1 cup of carrots chopped
2-3 zucchini chopped
1 onion chopped
1 cup of frozen corn
1-2 teaspoon salt
1-2 teaspoon pepper
fresh parsley chopped
fresh oregano *if you can find*
.
.
.
*Vegetarians ~ look away.*
Fry your bacon.
Set aside. 
Pour your olive oil in a large soup pot & saute your onion & garlic.
Then add your chopped carrots & all your spices along with your fresh parsley & oregano*.
Simmer & stir so that your carrots become somewhat tender.
Tomatoes, yes please!
Bring this mixture to a boil.

next comes your drained beans. mmm.
{adding these to your soup pot ~ along with your chicken stock}

chop your bacon & add
Allow to simmer & cook for awhile.
As for your:
pasta
corn
&
zucchini
I personally, like to place all the above 3, in my pot about 30-40 minutes before I serve this soup.  I do not care for over-cooked pasta, corn or zucchini.  But, again that’s my personal taste.
You may find you need to add some water to the mixture, if you add more pasta than what’s called for.  With kids, I always add a ton more pasta to all my soups.  Luckily for me, they love this soup especially if it’s heavy on the pasta.  Which I don’t mind, since they’re getting veggies all at the same time. 
Cook & simmer on low to med low for about 30-40 minutes adding some more fresh parsley at the end.

    this looks wonderful Kellie…yes – vegetarians could always omit bacon. I will have to add this to my recipes

    Kinda funny, there’s like 200 soup recipes on the Soupapalooza page now ( and I looked at a bunch), and I decided on yours, which was the first one. Should have just stopped there. Recipe looks great, I’m making it tonight, probably double the bacon though!

    Yummy! I made vegetable minestrone the other night (I had some ground turkey on the side for people to add themselves). I also added fresh green beans and cabbage. This time I left out the pasta (per hubby’s request..but often put that to add on the side as well). I love it with parmesan cheese sprinkled on top.

    The bacon sounds yummy
