avocado, corn, tomato & lime salad

and all the avocado lovers say, “AMEN!”

it’s the beginning of outdoor dining here in the South & I can’t think of a better dish to kick it off!
it’s one of my faves!
it’s so easy & perfect with any *almost* summer meal.

2 avocados chopped
container of cherry tomatoes, sliced in half
2-3 ears of corn kernels -shucked & cut along the cob
cilantro ~ the more the merrier, in my book!
juice from 2-3 limes
s&p to your liking
mix & devour

some people might prefer a cilantro vinaigrette like this one here.  in fact, this is where i got the inspiration for this salad.  i just don’t grill my corn.  it’s  easier just to shuck it.
