One Pot Taco Cornbread Pie

If there’s one thing I’ve learned to appreciate in my {ahem…} adult life, it’s cornbread.

I’m not really even picky about it either!  Although, made from scratch is by far the best.  It’s even better when you have fresh corn milled flour.  Ohmygoodness~  that is the best!  But for this One Pot Taco Cornbread Pie, I used a boxed mix, and with all the other ingredients mixed together it honestly tastes so good.

With the frigid temps and trying to {help} keep our house warm, I always turn to baking dinner.   This One Pot Taco Cornbread Pie is a combination of both the cooktop and the oven.  It’s the easiest to throw together.  Perfection need not apply here, I promise!  Because I am far from being a perfectionist in the kitchen or anywhere else, for that matter.  😉

This meal is pure comfort + carbs + hearty + spicy!  I even think serving it in a bowl adds extra comfort & warmth to this meal.

One Pot Taco Cornbread Pie

Ingredients

  • 1 lb of ground Turkey or Hamburger meat
  • 1 envelope of low sodium Taco seasoning
  • 1 can of drained & rinsed Pinto Beans
  • 1 small can of rinsed sliced black olives
  • 1 small can of chopped green chilies
  • a handful of fresh cilantro + some for garnish
  • 1/2-3/4 cup of your favorite Salsa + some for garnish
  • 1 cup of Shredded Cheddar or Mexican Mix Cheese + for garnish
  • 1 package of Jiffy Cornbread Mix (Mix per package directions)
  • Sour Cream for garnish *optional

Instructions

  1. Preheat oven to 400*.
  2. In a large cast iron skillet cooked your ground turkey or hamburger meat on med/high heat and drain.
  3. Add your envelope of Taco seasoning and add water per directions and mix well.
  4. Lower your heat on your skillet.
  5. Spread your turkey meat evenly across the bottom of the skillet.
  6. Add your rinsed Pinto Beans and spread evenly over the meat.
  7. Add your drained can of sliced black olives and spread evenly over the mix.
  8. Spread your Green Chilies evenly over the mixture.
  9. Add your favorite Salsa.
  10. Sprinkle a handful of fresh cilantro over the entire skillet.
  11. And add your cheese as well.
  12. In a separate bowl, mix together your boxed cornbread mix (per package directions) and spread the cornbread mixture over your skillet.
  13. Place entire skillet in the oven per package directions of the cornbread. Mine was perfectly cooked at 22 minutes, but some ovens may vary.
  14. Garnish with your favorite salsa, sour cream, cilantro, cheese and enjoy!!!

I almost forgot to mention that you can throw this together in a matter of minutes, and then put it in the oven.  From beginning to the table it takes 30 minutes!  And that my friends, is music to my ears!  I’ll also add, that all of these ingredients are on the lower end as far as cost.  So that’s a double or triple(??) win!

Of course this dinner gets extra points because it feeds my need for Mexican food!  I love the twist and flavor the cornbread brings to the mix of the Taco seasoning and of course the beans and garnishing!  It’s so good!

And let’s not forget the the clean up is a breeze with one skillet + your mixing bowl.
