Chopped Chili Cornbread Salad

After years of being a mom, planning, shopping, preparing, cooking and serving meals to my family, I have finally realized a few things that I should always do.

Keep it simple.

Keep it easy.

Take shortcuts when you can, but always make it worth your time.

That’s where Hormel Foods products come into play.  With their wide variety of food products, I know I can plan a good hearty meal for my family in a short amount of time.

Casual Dining for the family
My main goals when planning a meal is to provide protein and veggies, and enough leftovers so my husband can take some to work with him.  I’m assuming that’s most of our goals, correct?  When I plan a meal around Hormel® Chili, I know I can just either heat it and serve or add it in as part of an ingredient.  That’s exactly what I did here, with this Chopped Chili Cornbread Salad.

The perfect hearty and crunchy salad!  Chopped Chili Cornbread Salad
It’s a hearty meal that has a lot of crunch and of course good veggies.  I baked our favorite cornbread (you can use your favorite recipe or a box mix) and layered the salad along with Hormel® Chili in a bowl and it was ready to serve in a little amount of time and effort.

Layering Chopped Chili Cornbread Salad
Ingredients:

Cornbread already prepared (use your favorite recipe or a box mix)
Chopped Lettuce (Iceburg or your favorite)
2 cans of your favorite Hormel® Chili
2 cups of shredded cheese
2 cups of ranch dressing
20-30 Cherry Tomatoes (sliced in half)
5 slices of Hormel® Black Label® Bacon crumbled for topping
2 cups of corn
2-3 green onions chopped

*note:  the amount of ingredients used is depending upon the size of your serving bowl*

Chopped Chili Cornbread Salad.  A hearty salad with lots of crunch.
I baked my cornbread while I was chopped up my lettuce, tomatoes and onion.  I also fried my Hormel® Black Label® Bacon during this time.  Again, my goal is to have minimal time in the kitchen.  I allowed the cornbread to cool before crumbling it into my serving bowl.  But the idea is just to layer in your ingredients.  No matter how you layer it – it will be delicious!  But this is how I layered in my ingredients:

Lettuce
Corn
Chili
Cornbread
Tomatoes
Ranch
Cheese
Green Onion
Bacon

Chopped Chili Cornbread Salad - full of crunch and flavor!

 

You may serve it immediately or store in the fridge.  It’s a great salad to take to pot lucks, church socials or to family reunions.  Evite has some more great ideas on bringing food items to pot lucks.   I also like it because you can serve it throughout the year because it will fill you up even in the Winter months!
