Easy Red Velvet Pancakes

My inspiration for making these pancakes came from my friend Steve, an old college friend.  I find myself often living vicariously through his FB status or his tweets.  A couple of months ago he posted a picture of his breakfast that he was having in a bistro that happened to be in San Diego.   (yeah, I know…poor Steve.)  Sometimes he’ll even post a pic of the California sunset off of the Pacific Ocean.  I guess you can see, why I live vicariously through his statuses.  To those of you who don’t know…I was born & raised a Cali girl.

Anyways, he was having Red Velvet Pancakes at that Bistro. I haven’t been able to get my mind off of Red Velvet Pancakes.  So I attempted to make some myself, because after all we are the International Nest of Pancakes over here.

My first attempt turned out really good, if I do say so myself & extremely easy.

Red Velvet Pancakes
1 1/2 cups of Red Velvet Cake Mix
1 egg
1 cup of Milk
Cream Cheese Home Style Frosting
{Butter Pam for your skillet}
***note you may need to thicken it more with the cake mix, depending on how thick you like your pancakes.***
whisk together:
Using your choice of skillet, spray Butter Pam & dollop the average amount of pancake batter, like you normally do, heat & flip.
Being that it’s close to Valentine’s Day I decided to make heart shape pancakes.
*Note to self~ don’t ever use a plastic cookie cutter on a hot skillet.  Dumb, Kellie – really dumb.*
But in the end, they turned out fabulous, of course adding a dollop or two or three of cream cheese frosting makes a perfect pairing with the Red Velvet Pancakes.

Has anyone else heard of Red Velvet Pancakes? 

Surely they are served up somewhere in the South.

    Pancakes from a cake mix…genius! I bet chocolate would be awesome too! You have to be careful with those plastic cookie cutters…they melt quick:) My blog post today is about Valentine pancakes too!

    I love your little side comment about not using plastic cutters – I was wondering about that very thing this morning. Now I won’t have to make the same mistake! Thanks for the tip and the recipe.

    You are too cute! Using the plastic cookie cutters. These look like the perfect Valentine’s Day breakfast. In your recipe you listed the frosting and then to add all of the ingredients together. Is the frosting actually a part of the recipe? I think I might just have to make these.
    Thanks for sharing. It is fun to live vicariously through someone who lives in a place you love.

    Yum, yum, yum!! Maybe it is a dumb question, but, did you have these for breakfast, lunch, dinner or a snack? No matter–I’m sure they were tasty regardless of when you served them :O)

    I put pankcake mix in a heavy duty ziploc, cut the tip, and made N’s and 3’s for my son’s 3rd birthday. Might also work for hearts! He loved it!!! Just squeeze it out!!

    I love these! They look great & I love the idea of making them from a cake mix. I’m from the South & one layer of our wedding cake was Red Velvet, but I hadn’t heard of pancakes until this post!

    denny’s has red velvet pancake puppies that are to die for…because they are done in balls like that and fried instead, they have a great crispy/chewy outer covering and dipped in the cream cheese frosting..mmmmMMMmmmm
