Mmm…It’s definitely a pumpkin weekend. I made ginger-pumpkin pancakes for breakfast!!
I got this recipe from you last year and actually made them last night! It was late and my husband was annoyed that I was still in the kitchen but, all day long, I had been dreaming about eating those muffins with a cup of coffee after the kids went to bed.
