Cornbread Salad II

Okay, as I mentioned earlier…my dear mother made such good food for the entire family. But I must say the cornbread salad was probably my fave. It had been a few months since I devoured a bowl, and I wasn’t disappointed. Soooo very tasty. This image is somewhat similar to hers. Although, she adds lettuce to her salad and uses pinto beans instead of black beans..

I could kick myself for not taking photos of all the delicious food she prepared for us. A full Thanksgiving meal one night, homemade strawberry shortcake for dessert another night, cornflake crunch french toast for a morning breakfast, and sooooo on. We were all spoiled by some homemade goodness from my dearest of goodness mother.

The cornbread salad got me thinking of the obvious Cornbread Festival here in Tennessee coming up this month. We love to go. Where you can get filled up on numerous combinations of cornbread for a small fee, and hear some bluegrass pick’in while you’re muchin. By the way, they have several booths that make several variations of Cornbread Salad by the bowl full. If you’re interested!
