Peppermint Oreo Meringues

Let me go ahead & make this clear for you all, I really really love all things peppermint.  So the transition from going to pumpkin & spice to peppermint & chocolate is not hard on me at all.  It’s a tough job, isn’t it? 😉

So, I decided I would try to make meringues out of the Peppermint Oreos that magically appeared in my grocery chart.  They aren’t fancy & they really were easy to make (seriously, very few ingredients) and most importantly they were delish.

Peppermint Oreo Meringues
3 large egg whites
1/4 tsp cream of tarter
1/2 cup sugar
1 tsp pure vanilla extract
20-24 (approx) Peppermint Oreo cookies
1.  Heat oven to 250*  – Line a large baking sheet with parchment paper
2.  Using an electric mixer beat the egg whites & cream of tarter until frothy.
Gradually add sugar & vanilla & continue to blend/beat until incorporated into the mixture.
(2-3 minutes)

3.  Spoon 10-12 level spoonfuls of the meringue onto the prepared baking sheet & parchment paper. Place 1 Oreo on the center of each meringue & press down slightly.  Repeat.  Basically so you will have 2 layers of Oreo cookies.  Then dollop another Tbsp over the stacked Oreo cookies spreading it over both cookies to cover & seal it.

4.  Bake until the meringues are firm & dry.  60 to 70 minutes.  Let cool 15 minutes before serving.

They’re so good, they’ll make you do a dance & beg for mercy.
