I’ve been doing the Keto lifestyle fairly religiously for over a year now.  If I was being completely honest, I    took about a month off for the holidays and our family’s vacation.  Also, another honest point – my body could not wait to get back on it!  I always feel so much better when I’m on it.  So it was time to start thinking or finding new recipes to try.  Because variety is the spice of life, correct?

Well, let me tell you what I have discovered that is super delicious in this Keto Zuppa Toscana Best Copycat Recipe:

Radishes!!!!  Can you believe it?  One of my husband’s coworkers has been telling me to try radishes in my soups or casseroles.  But I was like “yeah, sure – whatever”  there’s no way that radishes could taste as good as an almighty starchy potato.  But I was reminded the other day to try radishes with this video who also inspired my version of this recipe.  But she should take most of the credit for this amazing discovery!  I admit it:  I was WAY WRONG about the radishes!  They taste just like a potato once you’ve cooked them down!

Here’s what the USDA has to say about carbs in radishes.  There’s 3.9 grams of carbs for 1 cup of radishes!

The other thing I’ll admit, is that I’m not a big Kale person.  I’ll eat spinach any day of the week, but not Kale.  So, ok are you ready for the delicious Keto Zuppa Toscana Best Copycat Recipe?

Alright, here we go:

Ingredients

  • 1 tbsp EVOO
  • 1 chopped onion
  • 1/2 - 1 clove fresh garlic (or you can use minced)
  • 4-5 strips of chopped bacon (cooked)
  • 1 lb ground Italian Sausage
  • 1 tbsp Italian Seasoning
  • 1 32oz chicken stock
  • 2 cups half & half
  • 1 teaspoon red pepper flakes (if desired)
  • 2 handfuls fresh spinach or kale (your preference)
  • 6-8 sliced radishes

Instructions

  1. Add your EVOO to a stock pot and allow it to get warm to hot.

  2. Add your chopped onion, and allow them to cook (4-5 minutes)

  3. add your garlic

  4. add your Italian ground sausage.  Brown and cook thoroughly.

  5. Place your liquids in the pot - chicken broth and half & half

  6. Then add all the remain ingredients.  Radishes, Cooked Bacon, Spinach and hot Pepper flakes if you desire.

  7. Cook and simmer for 1-2 hours - or even longer on low.

This Keto Zuppa Toscana best copycat recipe soup is such a colorful soup.  Not to mention delicious too.  One of my favorite parts about this recipe is that you only have to chop 2 things:  the onion & the radishes!
