Berries and Cream Angel Food Cake Dessert

March 29, 2020 by Kellie

I’ve been craving “fresh” ingredients lately.  Perhaps it’s because Spring like weather has been teasing us.  Are you feeling the same way?  Well, if you are I hope you’ll love this Berries and Cream Angel Food Cake Dessert as much as we do.

First, you should know there’s really no wrong way to make this berries and cream angel food cake dessert.

You can add or take away some ingredients.  Use what you have on hand!  The other part I  should admit is that I happened to have an Angel Food Cake mix on hand.  Do you know for an angel food cake mix all you have to add is water for the added ingredient?  How easy is that?

If you’ve made Angel Food cake from a mix or homemade, you probably know that it’s best to use all metal (or glass) utensils or a mixing bowl.  Something about plastic and the grease will not make an Angel Food cake rise.  You definitely want that cake to rise!  It’s so light and fluffy!  It’s the perfect cake to make for Spring and Summer.

Ingredients

  • 1 Angel Food Cake Baked, Cooled and broken apart in pieces
  • 1 pint rinsed and dried blueberries
  • 1-2 pints of rinsed and cut strawberries
  • 1 can sweetened condensed milk
  • 1 tub whip cream* optional
  • 6-8 servings Vanilla Greek Yogurt* optional

Instructions

  1. Once you've baked your Angel Food Cake - allow it to cool.  Break apart in a 9x13 baking dish.

  2. Prepare your berries, rinse and dry them.  Cut your strawberries and drizzle both blueberries and strawberries over your cake pieces.

  3. Pour your can of sweetened condensed milk over the berries and cake pieces.

  4. Cover cake and allow to cool for about 3 hours.

  5. Top with Whip Cream, vanilla Greek yogurt or whatever else you'd like to serve it with.

Obviously you can buy a pre-made Angel Food Cake in your bakery section.  There’s always the actual cake mix (that’s what I used = just add water!) and there’s the homemade version (which is the best!)  For this moment in time, when we’re in the middle of this pandemic I decided to use what I had on hand.  Plus, I’m running low on eggs, truth be told.  So there’s no judgement, however you want to make the cake will be perfect!

Cover your cake and allow it to cool in the fridge for at least 3 hours.  I purposely chose not to cover it with whip cream for my final picture, because I believe the beauty of this berries and cream angel food cake dessert is to serve up the way you want it.  Sometimes, I love it just as is.  My personal favorite way is to serve it with vanilla Greek yogurt.  Of course, my kids love it with whip cream.  I’m *trying* to break them of the habit for always wanting it with whip cream.  Even though the cake has sugar (trust me, there’s a lot of sugar in there) – going for the Greek yogurt is the more healthy option.
