Cornbread Salad Recipe

This Cornbread Salad recipe is such an easy, budget friendly and delicious one!  I also hope you’ll have most, if not all of these ingredients on hand & in your pantry!

What an adventure we’re on, right?  This pandemic, staying at home, juggling homeschooling, also trying to keep your grocery list in check – all those things are playing a lot with my anxiety. My emotions seem to be up & down as the hours go by, so I thought I’d return to something that’s always been my saving grace.  My blog.  I’m so thankful for this little space of mine, that I’ve had for over 11 years.  Creating recipes, crafts or decorating has always been my go-to when I need an outlet to get away from it all.

I made this Cornbread Salad Recipe last week, and I was reminded at how budget friendly it is.  This recipe also calls for most of your regular pantry staples that I hope you have on hand.

Here’s the list of fresh ingredients for my Cornbread Salad Recipe:

  • Lettuce (I used Romaine, but whatever you have on hand)
  •  Tomatoes (but I have a substitution if you don’t have fresh ones)
  • Cilantro (*not required, but so good if you have some on hand)
  • Avocado (*not required, but again – so good if you do have some)

If you don’t have fresh tomatoes, cilantro or even a fresh avocado on hand, this is what I use:

Just drain it really well, and maybe even spread it out & air dry it for 15-20 minutes (if you have the time) and it will work just fine!  I always buy this can with the cilantro and lime juice added into the tomatoes.  It makes such a difference, and bonus points when you don’t have the fresh ingredients on hand!

The above picture is all your dried goods that you’ll use for this salad.  Like I said this recipe is so pantry friendly!  This Cornbread Salad recipe is truly a hearty salad that provides the basic food group essentials all in one large bowl.  Packed with protein from the beans, carbs, and of course a good serving of veggies too.

Cornbread Salad Recipe

Ingredients

  • 1 baked package Cornbread (such a Jiffy or use your own meal & prepare & bake as directed on the packaging)
  • 2 heads chopped Romaine Lettuce (or whatever you have on hand)
  • 1 can rinsed & drained Pinto Beans
  • 1 can rinsed & drained Black Beans
  • 1 can (or FRESH) tomatoes such as RoTel
  • handful fresh cilantro *if you have
  • 1 cup shredded Colby or Cheddar Cheese
  • serving portions Ranch dressing

Instructions

  1. Bake your favorite cornbread as the packaging directs.  Cool and break apart.

  2. In a large bowl, start layering in your ingredients:

  3. Cornbread

  4. Chopped lettuce

  5. Sprinkle half of your Pinto & Black Beans

  6. Add your cilantro and tomatoes (or your RoTel tomato mixture)

  7. Sprinkle in about half cup of your shredded cheese

  8. Repeat.

  9. Serve with Ranch Dressing either on the side or on top of the salad mixture.

Of course you can add any of your favorite ingredients to this Cornbread Salad recipe!

  • olives
  • corn
  • green onion
  • green chilies
  • jalapeños
  • meat (chicken, beef etc)

Cornbread Salad Recipe
The presentation of it all look pretty layered in a large clear glass bowl.  But of course use whatever you have & that will hold it all.  Basically, after you bake your cornbread & chop your lettuce – this recipe is extremely easy.  Just dump your layers, serve & top with homemade or bottled ranch dressing!  So delicious and very filling.  Thankfully all 3 of my kids love this salad, and hopefully yours will too!
