Keto Chia Seed Coconut Milk Popsicles

If you’re trying to scale back the carbs or trying to do Keto, you’re going to love this treat.  These Keto Chia Seed Coconut Milk Popsicles are SO refreshing!  They’ll even help cure a sweet tooth that you might be having anytime of the day!

The temps are warming up around here.  The grass needs to be mowed, and there’s gorgeous flowers to plant.  On any given day, after working outside I  love a cold treat!  That’s what made me come up with the idea to make these Keto Chia Seed Coconut Milk Popsicles.

If you have a bowl that has a pour spout (similar style here) you’ll find it very helpful when you pour the mixture into the popsicle molds.  I use my set of bowls all the time for various things, but they really come in handy when mixing & pouring into the molds.

This recipe is extremely simple to make, and one the kids enjoy making as well.  All of these items can be found at your regular grocery store, but I did add some affiliate links for these items at the bottom of this post.  If you’ve never tried Chia Seeds or Coconut milk, they’re a must when doing Keto. I enjoy the options they brings when following a Keto lifestyle.

Keto Chia Seed Coconut Milk Popsicles

Ingredients

  • 2 cans Coconut Milk
  • 1/2 cup Chia Seeds
  • 2 packets Artificial Sweetener (such as Sweet N Low or Equal)
  • 1 teaspoon Vanilla extract
  • handful rinsed blueberries
  • handful rinsed sliced strawberries

Instructions

  1. In a mixing bowl with a pour spout, mix the coconut milk, Chia seeds, sweetener and vanilla together.

  2. Add in some (not all) blueberries and strawberries.

  3. Leave some fruit out to place in the middle of the popsicle mold.

  4. Pour in popsicle molds and freeze.

  5. Freeze for several hours or overnight until frozen.

These Keto Chia Seed Coconut Milk Popsicles are a perfect frozen treat. If you ask me, the “vital” part of this recipe is the Vanilla extract.  Coconut milk is very mild in flavor.  It’s delicious, but mild.  When you add the Chia seeds and the vanilla flavoring it takes on a whole new flavor.  The Chia seeds will “bloom” from the wet mixture and of course the berries make everything taste so fresh and delicious.

While preparing your popsicles, mix some of the fruit in the mixture, and fill your popsicle molds up half way.  Then divide and add your remaining fruit, and top with the remaining mixture.  You may have a little bit of the mixture left over.  If you do, just store in an air tight container & eat for breakfast the next day.  I’ve had my popsicle mold for years, but here is something similar that will make 10 popsicles at a time.
