Keto Chia Seed Coconut Milk Popsicles

Ingredients

  • 2 cans Coconut Milk
  • 1/2 cup Chia Seeds
  • 2 packets Artificial Sweetener (such as Sweet N Low or Equal)
  • 1 teaspoon Vanilla extract
  • handful rinsed blueberries
  • handful rinsed sliced strawberries

Instructions

  1. In a mixing bowl with a pour spout, mix the coconut milk, Chia seeds, sweetener and vanilla together.

  2. Add in some (not all) blueberries and strawberries.

  3. Leave some fruit out to place in the middle of the popsicle mold.

  4. Pour in popsicle molds and freeze.

  5. Freeze for several hours or overnight until frozen.
