Queso – Jalapeno Souffle

April 2, 2010 by Kellie

This soufflé may be served in bite size pieces or served as main dish servings.  This is a great dish to add a little kick to your Easter Sunday Brunch.  Are ya ready?  Because this really is one of my very faves!
1 lb grated cheddar cheese
10 eggs beaten lightly
1/2 cup of flour
1/2 teaspoon salt
8oz jalapeño peppers, chopped
1/2 cup margarine, melted
1 pint cottage cheese
Mix dry ingredients, add chopped jalapeños, margarine & cheese.  Blend in eggs.
Bake 9X13 greased dish
~400* 15 minutes
then
350* 20-25 minutes.~
Cool about 5 minutes, slice into bite size or brunch slices.
Serve alone, or with sour cream, tomato slices, or salsa.
***Recipe from an old Southern Junior League Cookbook***
I have taken this to many gatherings or is great on Super bowl Sunday or even Christmas morning.  A great recipe to have in your repertoire.
You’ll thank me for this one – I promise!
