Summer Caprese Chicken Avocado Salad

Ingredients

  • 4-5 Grilled Chicken Tenderlions
  • 2 packs 16 oz each Cherry Tomatoes sliced in half
  • 1 pack Mozzarella "Pearls"
  • 1 bundle Basil - cut thinly
  • 1-2 sliced/chunk ripe avocados
  • 1/4 cup EVOO
  • juice from an entire lemon +/- depending on your taste
  • dashes of salt - to your liking
  • 1 1/2 teaspoons of Lemon Pepper

Instructions

  1. In a mixing bowl, slice your washed cherry tomatoes in a bowl.  Add in your sliced/cubed grilled chicken along with your cut up basil leaves.  

    ***I typically leave out the avocado and the mozzarella pearls until right before serving*** 

    Mix all the other ingredients together in with your tomatoes, basil and chicken.  Store in fridge until ready to serve.

    Add your avocado & mozzarella pearls right before serving.
